IF I WERE TO COOK THIS #1

The first post ever!!! If I were to cook the dish, the Chef inspired me. Copy-cat the chef's cooking is also learning, right? Hehe.

Ladies' Day for me and my buddy, Cecilia (also a piano teacher) today... She recommended The Peak Condominiums' eatery, Chef Tan Restaurant and October Cafè. Good! I'll get some ideas for myself to cook something new at home.

Hiong Dai Mai Funn (香底米粉) is a type of Chinese style cooking that is served with:
-a deep fried vermicelli, crispy and dry, laid flat on plate,
-topped with stir-fried meat/seafood with veggies.
-with lots of flavourful gravy.
-with "wok hei" (蜗气) meaning the aroma of the wok heat, the odor of smoke.

I had the above meal, it was quite nice, though I hoped for more "wok hei", by tossing the food in the wok while on high heat, thus creating smoke (but not burnt). Cooking level 999!!!

If I were to cook this, I would need a big black wok and a pair of strong arms (one to hold the spatula to stir the ingredients, and one to toss the wok to create the odor of smoke).

We ladies ordered this one below for sharing as well... Mmm😙😙😙...

Spring Rolls with stir fried carrots and veggies inside. Very crunchy skin outside, and veggies well seasoned and soft inside... I guessed the cornstarch did something here, made them even crispier... served with Thai sauce (sweet and sour sauce).

If I were to cook this, I would follow the ingredients exactly. I would also coat the spring rolls in cornstarch before frying them. Bravo!

Tom Yum Seafood with Rice Vermicelli... I don't really know what to say... seemed like we had to "dive in" to find out. LOL! My bestie ordered this one and I guess it was okay... I had better Tom Yum elsewhere... Gonna feature here soon.

If I were to cook this, I would skip this because I preferred other people or restaurant to cook this for me. There are many ingredients needed to "tailor" Tom Yum, so I'd rather buy pre-made Tom Yum paste and just prepare noodles and seafood to cook with it.

We went to October Cafè to enjoy dessert. We had the tasty orange butter cookies, hot latte and iced latte. The price was expensive but our sisterhood worthed more than that.

If I were to bake that, I'd put some crushed walnut in the cookie dough, walnuts goes well with orange...

In fact, walnuts goes delicious with anything... I love walnuts...
