When you wrote gallons of water, worried of becoming dehydrated you remind me the heat in the summer season in India with 49 degrees I thought due to being not far from seaside it should be less extreme. It seems that such local food should be tasty. However, I would be worried about any stomach problem, just to be honest.
Ghana is the first country have trouble eating street food. So I take meds once in a while before going on long bus rides. We just got back from Bolgatanga, we had over 42 celsius on some days! We were melting.
I had some trouble with eating street food in India and melting I have an idea what you mean. It is challenging but I think you did and you are doing a good job.
