even if it molds on top you can scrape that off, as long as it smells active and bubblie can be normal. I make apple cider vinegar with apple cores, peels you name it, I just made some pear cider vinegar, super good for salads, same process basically any fruit with sugars will ferment into an alcohol or vinegar depending on recipe! :)

I do like to keep in frige.. however, if it's colder temps say in Winter you can leave in cupboard.
