Everyone loves a perfect fish fry. Skip the fancy seafood spot. The real flavor happens right here in my kitchen. You need control over the heat and the ingredients. That amazing, loud crunch tells everyone dinner is ready.

The coating holds the real secret. Yes, the oil must hit 375 degrees F. But the crust structure matters even more. I make my cornmeal better with a special mix.

Use equal parts of all-purpose and rice flour. Adding coarse polenta makes it super crisp. This keeps the coating light yet firm. A lot of smoked paprika and dried oregano adds warmth. It is not just about giving the fish color.

Frying fills the whole kitchen with noise and scent. I Dip the fish pieces in buttermilk first. Then coated them totally in the flour mix.
Then dropped them right into the hot oil. The sizzling starts right away. In just a few minutes, the light crust turns dark, golden brown.
Take them out and put them on a wire rack. This lets extra oil drip off. The fish gets firm and crisp while resting.
