Hope every one is good and healthy.
I wanted something sweet and fluffy. A sponge cake came to mind. Light and sweet, it would cheer me up.
But using the oven felt like too much work. Then, an idea popped into my head. A no-bake sponge cake.
My kitchen became a test area. I whipped egg whites until they were stiff. Their fluffiness meant a light cake. Egg yolks, sugar, and vanilla mixed together. They turned into a light yellow stream.
Then I gently folded the yolk mix into the egg whites. I moved slowly, keeping the air inside. This created the light texture.
No oven was needed here. I used a steaming pot instead. A bowl went over hot water.
The mix inside became thick like custard. This was the key step. The gentle heat cooked it well. No harsh direct heat dried it out.
After it cooled, it looked great. It was pale and very light. A soft hint of vanilla came through. I added powdered sugar and whipped cream. Then it was done.
A no-bake sponge cake, tasting like sunshine. It showed clever thinking. A sweet win from a simple wish. Just a bit of kitchen magic.
