It mainly due to the Breed, they have a lot of "marbling" or fat between the meat. This makes it tasty and tender. The fat is supposedly healthy. As far as i know , the Japanese are the only farmers that massage their Wagyu cattle. But then, they sell a steak over in Japan for a phenomenal price. For Farmers here, massaging would be uneconomical for the price they are paid and the size of their herds.
