1️⃣ Cut pork belly into chunks, blanch in boiling water, then set aside.
2️⃣ In a pan, heat some oil and add rock sugar. Stir until the sugar melts and turns amber, then add the pork pieces and stir-fry until nicely caramelized.
3️⃣ Pour in hot water to cover the meat. Add scallions, ginger, and spices as shown in the photo.
4️⃣ Season with: 3 pieces of aged rock sugar, 2 tablespoons yellow cooking wine, 2 tablespoons light soy sauce, 1 tablespoon dark soy sauce, and a pinch of pepper. Cover and simmer over low heat for 20 minutes.
5️⃣ Add quail eggs (if you’d like, pan-fry them until golden first). Continue simmering over low heat for another 20 minutes. Finally, turn the heat to high to reduce the sauce, and sprinkle with chopped scallions before serving!
