It is currently the rainy season. During the rainy season, most people stay indoors. And Bengalis love to eat a little. They always love to eat more. And when the rainy season comes, we go a little overboard. During the rainy season, it is great to eat khichuri and beef stew cooked with banana leaves. Similarly, in the afternoon at the end of the rainy season, everyone cooked beef stew and khichuri together. As the word goes, so does the action. Everyone got together and started cooking. I am trying to share with you step by step how we cooked and what the state was at the end.

At first we put onion, green chilli, garlic and other spices in hot oil. We also added turmeric, cumin and spices and fried them very well in oil. The better you fry them, the more flavour you will get. In fact, before making anything, you have to cook it well, if you can cook it well then the flavour of that thing will increase.

In this mixed masala, I mixed rice dal i.e., collard greens and lentil dal together. I mixed them together and fried them nicely. The more nicely you can fry them, the tastier they will be. If you add a little ghee to it, its taste will be enhanced. The more nicely you can fry the khichdi, the more beautiful you can make it with masala paste, the tastier it will be.

Then again I fried the rice, daal and mixed spices nicely. Here the better you fry it, the more the khichdi will taste. And if you over-fry it, i.e. it burns, then it will smell bad. So in this case you have to fry them very carefully. Once done, then you add water and try to boil it sufficiently. When the color of the rice, dal and other things turns brown, you will understand that it is completely fried.

Then you have to boil it with water and cook it until it is cooked. There are two types of khichuri, one is dry and the other is a little wet. Wet khichuri is much more fun to eat. If you eat wet khichuri with beef, then the tendency to eat it increases a little more. During the rainy season, there is no food other than khichuri and beef. As I said before, Bengalis are a bit picky eaters. They always like to eat a little more. Anyway, when it finally comes to a certain stage, the khichuri is complete.

After the khichdi was cooked, I took a photograph while serving it, that is, eating it. Khichdi had beef, lemon, kheer, and Pepsi, all together, and we had a great meal. Who doesn't like to eat such foods sometimes? And so, sometimes, during the rainy season, there is a need to eat such foods. All these foods are very dear to every person.
