Crustless Quiche #2 - 7 April 2025

A week ago I wrote a post about a new recipe I’d found that uses cottage cheese to make a quiche without a crust. You can read about my crustless quiche here.
In my view the recipe was successful but I did fieel at the time that I chould have added a few more vegetables like broccoli or mushrooms. That’s exactly what I did yesterday. The photo above shows you a slice of the crustless quiche showing some bits of broccoli, and of course bits of sweet potato.
Apart from adding the extra broccoli and mushroom slices I did not deviate from the recipe and it worked well although I did find that the bits of sweet pepper could have been softer this time. Perhaps I should soften the harder vegetables for a couple of minutes in a frying pan and let them cool before I layer them on the dish.

In the photo above you can see most of the ingredients laid out ready to use including the recipe I used and still need to refer to. In the glass bowl you can see how I prepared the vegetables in advance. I even had a major improvement to my cooking : a new grater !

I bought this box grater online at £7.99 or around 40 Steem. It’s still very new and sharp so it was very easy to grate the sweet potato and later the cheddar cheese.
I greased my Pyrex dish carefully and layered everything neatly. Then I spread the grated cheddar cheese on top as you can see in the photo below :

I finished doing all that and had huge doubts and regrets straightaway. I remembered the liquid ingredients, namely the cottage cheese, 5 eggs and milk and was convinced that my small Pyrex dish would overflow.
I decided to prevent heartache and lots of oven cleaning by finding my slightly bigger (and definitely not so nice) rectangular Pyrex dish. There was no way of doing the changeover neatly so I just poured all the contents and thought they’d get mixed while cooling in the oven anyway.

Next time I’ll add a few slices of tomato just to garnish. I’m happy to report that the ‘change of dish and layered messy ingredients’ didn’t have any repercussions on the cooking time or taste.
