Gooseberry and Raspeberry Eve's Pudding - 22 July 2025

I came across quite a few raspberries and gooseberries that needed to be dealt with quickly. I froze a Iot of the fruit as well, but decided to try and make Eve's pudding with some of the fruit.
I rubbed some butter on the sides of a Pyrex dish, and then spread about 300 g of the fruit. I also sprinkled a bit of sugar on top to counteract the tartness of the gooseberries which can be rather too much for me at least. Fortunately these were very nice so that was not a problem.
I then started making the topping. The photo below shows you one photo I took of the process.

As you can see there’s not a lot of mixture in this recipe, with only 100g of flour and 75g of butter. I did actually use less butter and sugar. I reduced the amounts from 75g to 50g and it turned out okay.
I also added 1 tablespoon of hot water to the mixture as I saw in a recipe not so long ago. I reckon that’s added to make the mixture a bit less thick so that it can cover the fruit well.

I poured the cake mixture on top of the fruit and baked in the oven for about 25 minutes. As per usual I forgot to keep taking photos of the process ! In any case I can recommend this recipe. I’ve tried and tested it and it works fine.

After waiting for about 15 to 20 minutes for it to cool a bit I was able to cut a piece and have a portion.

It went really well with a bit of custard. It was delicious.
