I have used 'shortening' or lard or coconut oil with good results.

Here we have white (bleached/refined) flour and whole wheat flour which is less... fine? I can't use too much or the cookies become dry and crumbly, but with the proportions I listed, they turn out just right (IMO) but you can also just use regular white flour for the whole recipe as well.

That's really helpful. Because of feeding vegetarians, I have to be careful of lard, but coconut oil would work or a product called Holsum (which probanly isn't!). Thanks, @byn
