Who's ready for dinner!!! Southwestern chicken with sweet potatoes night!
Ok, so by now you guys know my husband would rather eat a half of a peanut butter sandwich or a pancake than the stuff I cook. Well I didn't invite anyone over to eat and as I was cooking I told him take it or leave it! It can be my lunch tomorrow! Well he ate every last bite on his plate! This is a winner guys for finicky eaters! He left zero on his plate! Here is the finished

I peeled two sweet potatoes and cut them into little squares I put salt pepper and olive oil I cooked then for ten minutes on 450, ten minutes later I added red bell pepper cut up small to the side and continued baking for twenty more minutes
I also peeled and ground the skin of a lime and scallions
I then fixed my glaze I put olive oil, my southwestern spices, the whites of the scallions and the ground skin of the lime with some lime juice and added the chicken
As I was chilling the chicken on medium heat I had a few minutes to clean a little bit. I cooked the chicken five minutes on each side
I then took out the vegetables put then on our plates cut up the chicken and put the greens of the scallions and squeezed some lime juice and walla! I will definitely be making this again it was delicious and easy.

It Looks delicious. I love the orange sweet potato. In Venezuela we got all three: pink, yellow and orange. None exceeds the flavor of the last. I loved this dish.
