This is a quick and delicious recipe for chicken and cheese quesadillas, perfect for a fast and tasty meal!

Ingredients:
- 2 chicken breasts
- 4 flour tortillas
- 1 cup shredded cheese (mozzarella, cheddar, or your favorite cheese)
- 1/2 onion, chopped
- 1/2 red bell pepper, chopped (optional)
- 1 teaspoon olive oil
- Salt and pepper to taste
- Salsa or guacamole (optional, for serving)

Instructions:
- Cook the chicken: Season the chicken breasts with salt and pepper. Cook them in a pan with a little olive oil over medium-high heat for 5-7 minutes on each side, or until fully cooked. Then, shred the chicken with a fork.
- Prepare the vegetables: In the same pan, add the chopped onion and red bell pepper (if using), and sauté them for 2-3 minutes until softened.
- Prepare the quesadillas: Place a tortilla in a pan over medium heat. On one half of the tortilla, add some shredded chicken, sautéed vegetables, and a generous amount of shredded cheese. Then, fold the tortilla in half.
