Cook cocoyam with utazi sauce with me
Cocoyam has different varieties or will I say species and it has different taste so today I want to be writing about this white cocoyam (Colocasia esculenta).
It has a lot of health benefits and should be eaten atleast once or twice in a week as you will benefit from it.
The white cocoyam is widely known by the Africans and it's their best cocoyam. One thing special in the cocoyam is it taste. It has a special taste and it's very sweet.
Back then in the olden times, my grandparents will always boil the cocoyam, make sauce from the mortar and everyone will join to eat. It used to bring joy, peace, unity to family relationship as everyone eat together. It used to be my favourite meal when I visited.
So I boiled the cocoyam and made utazi sauce to go with it then prepared a barbeque fish.
Ingredients
- Cocoyam (White)
- fish
- Palm oil
- Crayfish
- Pepper
- Onions
- Tomato (fresh and tin)

I placed my pot on fire then added oil to it, I heated the palm oil to be very hot before adding other ingredients.
I added tomatoes to it and stir consistently to avoid getting burnt.
I added fresh tomatoes to it and stir as well.
I added onions, crayfish and pepper at this point to it.
I added utazi to it then add some seasoning to taste
I already prepared barbecue fish as my protein

So while preparing this food, one thing came to my mind do you know what that was?
Those times when I visit my grandmother and she will make this white cocoyam the same way I am preparing it now. Then the beauty of eating it is sitting down to peel the skin while she will be telling us story of how the lion visited her farm. One thing is that, we don't usually like eating it but because of the story she is telling we will imagine ourselves being in that farm while she saw the lion, we will be busy telling her what we would have done. Hahaha until we finish eating, we won't know.
