My Ceviche Is Getting Better!
After work, I decided to come home and make myself some ceviche. Earlier in the week, I picked up some groceries and thought, why not grab a few things to make a basic ceviche? I hadn’t had the time or energy to make it during the week, but today felt like the right moment to finally go for it. I prepared it the way I normally do, just without any of the extra flair I usually add. It was a very simple ceviche—yet somehow, it had the best flavor I’ve ever managed to pull off.
Ceviche is one of those dishes that’s deceptively simple: easy to make, but just as easy to mess up. Most of my previous attempts didn’t turn out as flavorful or as interesting as this one. Ironically, the only twist I added was a tiny bit of fresh ginger, yet this turned out to be the best batch I’ve ever made. Every time I prepare ceviche, I like to experiment with a new twist—but this time, simplicity won out.
