Looks good! I always wanted to try cashew cheese but it's both too expensive and wasteful since all recipes I saw before require cooking it which ruins the fats (or negatively changes the way they act in our body).
You seem to have find a solution to this, the starch from potatoes which thickens it all. I suppose I should have a better blender for a silky texture tho'... Plus, the potatoes bulk it all up making it less expensive.
