Recipe! Banana bread

I'm back at it again baking away!

I was really wanting to use some bananas, I had too many and they definitely were perfect for banana bread! The recipe I used was from Sally's Baking, I've used her recipes before and they've always been great. I actually added in walnuts, so this should be called a banana and walnut bread.

Ingredients:

  • 250 grams plain flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 113 grams unsalted butter
  • 150 grams light brown sugar
  • 2 large eggs
  • 80 grams plain yoghurt
  • about 3 large bananas
  • 1 teaspoon vanilla essence
  • I used the optional 100 grams walnuts (chopped)

The Steps

First, in a medium bowl, I prepared the flour, baking powder, salt and cinnamon. I used a fork to mix it all together.

Then, I whisked together the butter and brown sugar together until it was smooth and creamy, and added the eggs one at a time until it was all beat in well.

After this, I beat in the yoghurt, bananas (which I mashed before), and the vanilla essence, until it was completely combined. You can see in the picture above that it was quite a liquidy mixture at this point, I was a bit worried but I trusted the process. I slowly added in the dry ingredients until completely combined.
At this point, I almost forgot to add in the walnuts, but I did add them in. But instead of forgetting to add them, I forgot to take a picture of these two steps! I folded the walnuts in making sure not to overdo it.

Then, I put it in the oven at about 177 degrees Celsius, for about 50 minutes, which was about 10 minutes quicker than the recipe. Not sure why this happens to me but I'm glad I always keep checking it!

I was quite happy with this recipe, in the past when I've made banana bread they've always been a bit dry, but I think the yoghurt helped the texture stay moist! It also came out with a nice crust, so a good combination of textures.
