Vermicelli in stir fried veggies
I'm trying to a little experimenting again in the kitchen. I haven't tried cooking vermicelli (or sotanghon) before but I craved for it when a friend told me about him having this for lunch the other day.
This is another quick cook but is really delicious and healthy.
All you need are the following:
Vermicelli
Chicken breast
Green beans
Carrots
Tomatoes
Garlic
Onion
Red bell pepper
Salt & pepper
Olive oil
To start, I cooked the vermicelli on a pot of boiling water for just a few minutes. It cooks really quick so you have to just kind of blanch it there and then soak it in iced water.
Then heat the pan and add olive oil. Sautee onions first then garlic. Add in the red bell pepper. Put in the diced chicken breast. Put salt & pepper. Cook until brown. Stir fry until the chicken is immersed well with the ingredients.
Then you can go ahead and add the tomatoes, green beans then the carrots.
Once it's done, you can go ahead and drain the vermicelli before adding it into the pan. Stir and mix everything well.
And that's it!
I will try to just stir fry the vermicelli on my next try. The husband loved it though he's excited with just the stir fry vermicelli and veggies variation.
