You could definitely quarter the onions before hand, but in doing that they would fall apart during the cooking process and end up as onion slices (which is also fine). It really depends on your personal preferences. I left them whole with the intention that they would have to be cut with a spoon as they were being eaten. They get soft enough to do so if they are cooked long enough.

Yes, I've been drinking a lot more wine while I've been cooking here. Some for me - some for the recipe, some for me - some for the recipe lololol :)
