Have you ever tasted an African corn before?
Well, this is much like a question I asked my visitors to Africa. Maybe one of the questions I will ask some good friends who will visit here soon
I am aware corn can be found in other part of the world, maybe with a different taste with that of Africa.
For one thing, this is corn season in Nigeria and it is one of my best food season. I can have corn a whole day without any other food. I like corn a lot and I also consume it in large quantities.
I could remember when I was a kid, I was extremely happy whenever it comes to corn season, and one of the best time I was always happy going to the farm was when we are going to harvest our corn or cucumber.
Will you call that an addiction. At one point when I was much younger, my mom once told me it's an addiction. Well I disagree then and now. I really haven't seen any negative effects of eating corn on me. Trust me, this is good food.
Farmers had already started planting this since early February over here. Sadly some who started planting since early January - lost their corn due to much heat. That wasn't a good time to plant that. Some farmers were tricked to plant when they saw a little rain pour during January. But the problem was - the rain water then didn't enter the soil properly because the rain wasn't much.
However, towards ending of February we had much rain fall which was a good sign to plant corn.
As we know, corn grows for about 3 months before it is matured to be harvested. So, it's time for harvest over here and that makes it my good season.
It's only common to see roasted or boiled corn in almost every street in Uyo during this season.
One might think that their prices would be friendly 😁, but trust me, they are not. A stick of roasted corn here goes for about 700 to 800 naira (that's approximately 3 to 3.5 STEEM), same goes with boiled or cooked one.
However, as a street and hustling guy that I am who thinks before spending, I realise that buying this corn the fresh one from the market is the best.
That way, you can either choose to roast the corn or boil it.
I enjoy either ways and I consume this almost every day as food.
Are there some health benefits of eating corn?
- For one thing - it aids in digestion and gut health
- It helps to improve eye health
- It moderately affects blood sugar
- It helps in protecting the heart and it provides essential nutrients and vitamins to the body
There are actually many other health benefits, why not try it to also experience them 😀.
For me, I am a PRO in eating corn 😀. So I'll take time to explain the process of cooking.
For example, the day I cooked these corn, I also bought the roasted one on the street...
I bought the fresh ones to be cooked at home
I removed the outer sheath of the corn for easy cooking as you can see above. Ofcourse this is step 1.
I started cooking it on my Gas cooker as you can see above which seeve as step 2.
I allow it to boil for about 25 minutes. Note that duration of boiling depends on the freshness of the corn. If the corns are much stronger, it could take almost an hour.
And now, the corn is ready!! Can you see it? Can you smell the aroma of this sweet corn...?

This last stage or step won't be pleasing to some because I am done eating...😀.
Well, folks that was just a short way of saying that it's corn season in Nigeria and comes with good feelings.

Все любят кукурузу. =) Урожай кукурузы у нас в августе-сентябре. Свежую кукурузу у нас чаще варят, но можно и запечь в духовке.
Good to know how còrn is used over there. Here we have it early April till June or July. It's a nice season
Am really enjoying this season because i love corn so mush and guess what?i just finished eating a very delicious corn steamed pudding ( Ekorki) now am planning on making asa abakpa am surely taking full advantage of this season.
"Ekorki"...I have never tasted that.., I would like to taste it.
This corn was planted very early because i have not tasted ome this season, i am sure i will soon
