Zesty Vietnamese Chicken Salad and A Hearty Porridge - Recipe For a Happy Meal
Hello my dear friends, how was your day? It is so hot here in Da Nang these days. I spend a lot of time at home, mostly relaxing. And with the weather like this, I wanted to make something that’s not only fresh and easy to eat but also nourishing and comforting. So I came up with the idea of making two in one chicken meal: chicken salad and chicken porridge.

Ingredients:
- White rice
- Half of a chicken
- Straw mushroom, carrot, onion, lime
- Shallot, salt, fish sauce, black pepper, msg(if like)
- Cooking oil
- Vietnamese coriander, basil, coriander, spring onion, or other kind of herbs that you like
How to make it:
Step 1: Clean your chicken well, then boil it in a big pot with a bit of shallot and salt to add flavor. After around 20-25 mins depending on how big your chicken is, once it is fully cooked, take the chicken out and let it rest. Keep the broth, we’ll need it for the porridge.
Step 2: Heat the pan and add some cooking oil, add some chopped shallot until fragrant and pour the white rice in and quickly stir it with some salt. This step gives your porridge extra aroma and keeps the grains from breaking apart too much when cooked.
When the rice is well fried and looks a bit golden. Pour it into the pot with chicken broth and cook it for 25 minutes.
Step 3: While cooking the porridge, prepare some straw mushroom, if it is too big, cut it half, leave it whole if it is small.
Now, when the porridge is well cooked, pour straw mushroom in and add some salt, msg, fish sauce, adjust as your taste.
Step 4: While it is still cooking with the mushroom, time to make the chicken salad
Shred the boiled chicken. Then thinly slice your carrot and onion. A tip for you, use ice water to soak the onion, it help to remove the harsh bite and makes the onions extra crunchy.
Step 5: Now bring all ingredients for the salad into a big plate and add salt, black pepper, lime, adjust to your taste.
Mix it well and tada see how beautiful the salad we have here.
Step 6: By now, the porridge should be perfectly cooked, turn off the heat and add some coriander, spring onion, black pepper.
Alright now time to enjoy nutritious, healthy chicken porridge and chicken salad
