(Eng-Esp) Crispy and golden potato cookies / Crujientes y doradas galletas de patatas

I will share with you a very special recipe, for some crispy and golden potato cookies, these are ideal for a snack, I usually prepare them for my grandchildren, since they are very natural, as well as delicious.

Compartiré con ustedes una receta muy especial, de unas crujientes y doradas galletas de patatas , estas son ideales para merendar, suelo prepararla para mis nietos, ya que son muy naturales, además, de deliciosas.

You will need to:

Necesitarás:

• 1 medium potato.
• 1/2 cups of cornmeal.
• 1 egg.
• Salt and pepper.

• 1 patata mediana.
• 1/2 tazas de harina de maíz.
• 1 huevo.
• Sal y pimienta.

First, we boil the potato until soft, peel it and then mash it very well.

Primero, hervimos la patata hasta ablandar, se pela y luego la trituramos muy bien.

Next, add salt and pepper to taste and the egg, mix until incorporated.

Seguidamente, agregamos sal y pimienta al gusto y el huevo, mezclamos hasta incorporar.

Add the corn flour, integrate well to form a compact dough.

Adicionamos, la harina de maíz , integramos bien hasta formar una masa compacta.

With our hands, we assemble small balls and then flatten to shape the cookies.

Con nuestras manos, armamos bolas pequeñas y luego aplanamos para dar forma a las galletas.

Bake at 200 C for 15 minutes until golden brown.

Llevamos al horno a 200 C por 15 minutos hasta dorar.
