I really was quite pumped about your asparagus post and I think it is a highly misunderstood vegetable. It's so good for the human body and it's crazy expensive here. I looked in the grocery store last night and a bottle of fermented asparagus was $10. I'd be surprised if it was 1/2 a pound in size.
Yeah, the price is ridiculous to buy, but it makes me consider using it as a cash crop in the future.
Exactly! I thought about growing it to sell the roots too.
It's a $1 a root, up here...and the purchasing window is short.
Fermenting and selling by the jar seems to be the most gourmet way to sell it.
I bet you could come up with a fermented pepper/asparagus winning recipe.
You know, @noganoo made an excellent post about some pickled asparagus a while ago.
I got to try some, and it was amazing!!!!
