You plant a piece of a potato, and it yields pounds of potatoes. I've never tried the blue potatoes, but have heard they're great. Blue mashed potatoes would be pretty funny.
ive actually had purple potatoes before, they are pretty darned tasty.

I sure hope they don't taste like purple soap bars! :-)
