Homemade Cherry Liqueur Recipe
Ingredients:
- Ripe cherries: 5 kg
- Sugar: 2.5–3 kg (to taste)
- Strong alcohol (gorilcka, 40% spirit): 3–4 liters
- Water (for syrup, optional): 1L
Equipment: - 10-liter enamel bucket
- Strainer
- Clean old curtain (to use as a filter)
- Jars or bottles for storage
- Wooden spoon or potato masher
Instructions:
Prepare the Cherries: Wash the cherries and remove the stems. You can leave the pits in for a hint of almond flavor. Place the cherries in the bucket.
Mash the Cherries: Use a masher or wooden spoon to crush the cherries and release their juice.
Add Sugar: Pour sugar over the cherries and mix well.
Fermentation (Optional): Cover the bucket with cheesecloth or the curtain to protect it from debris and insects. Leave it in a warm place for 3–5 days, stirring once a day.
Add Alcohol: Pour the alcohol over the cherries until fully submerged. Cover with the curtain again and let it sit in a dark place for 2–4 weeks.
Strain: After steeping, first strain through a strainer to remove pulp and pits, then filter through the curtain to eliminate fine particles.
Bottle and Age: Pour the liqueur into bottles and seal tightly. Allow it to rest in a cool place for another 21 days to enhance the flavor.
