The Diary Game: A Nutritious Treat With Plantain And Pumpkin Leaves Sauce (02-10-2025)

Hello beautiful and handsome steemians. It's been a while since I posted and I'll love to give a brief introduction of myself before I go into the business of today. I'm Inimfon Nathaniel by name but I'm known on steemit as nhiemfon001. I duly apologize for not writing for some weeks now. I've been going through a lot emotionally and psychologically, and trust me, it has been really hard keeping up. Regardless, I'm here today, healthy and hearty. How have you all been? I really missed everyone a lot. I'd love to catch up on the gist of things that happened while I was away.

Today I'll be taking you on my food blog and you know how we do it, it's going to be educative and interesting. We'll be preparing Plantain and vegetable sauce. Last week, I visited the hospital, and after checking my blood level, I was advised to take more of vegetables and fruits. I got home and I decided to prepare something so I could take my meds.

About to prepare my meal

To prepare plantain and vegetable sauce you need: Plantain (ripe or unripe; I used unripe) Pumpkin leaves Palm oil Seasoning cubes Salt Pepper Onions Crayfish Proteins (meat or fish) With these ingredients, your meal will be tasty and nutritious.

You peel your plantain and wash it thoroughly. Then cut them into desired pieces, add water and place the pot on fire.

Cooking the plantain

While the plantain was cooking, I washed the pumpkin leaves and onions and sliced them into smaller pieces. I ground the pepper and crayfish. I went ahead to add salt to the plantain.

When the plantain was properly cooked, brought down the post and drained the water. I placed my pan on fire. I added the oil and let it simmer. The onions were the next ingredients that went into the pan. Next, I added seasoning cubes, salt and a little water. The pumpkin leaves was the last and I stirred gently and covered the pot to cook.

Cooking process

After cooking for about two minutes, I dished the meal. I had a really nutritious meal. My siblings kept praising me. They enjoyed the meal.
