Hi everyone, who would like to join me in cooking a delicious mushroom curry specially and differently?
In my home country of Sri Lanka, many people make their living by growing mushrooms. Mushrooms are among my favorite foods. It has a special yumminess. Do you enjoy spicy food? Then, respecting the local spice, let's make a delectable curry with mushrooms.
Ingredients:
- Mushrooms—250g
- Big tomato – 01
- Bombay onion—01
- Crushed ginger and garlic—1 tablespoon
- Crushed cardamom and clove—just a little
- Turmeric powder – ½ teaspoon
- Roasted chili powder—2 teaspoons
- Roasted Curry powder – 1 teaspoon
- Black pepper powder – 1 teaspoon
- Rampe (pandan leaves) and curry leaves
- Green chilies—2
- Salt—as needed
- Water—1/2 cup
- Oil—4 tablespoons
- Mustard seeds—½ teaspoon

Step 01
First, clean the mushroom well and then tear it into little bits. Next, add half a teaspoon of salt and turmeric, stir thoroughly, and set aside.
Step 02
Next, roast 2 spoons of chili powder and 1 spoon of curry powder on low heat and keep aside.
Step 03
Then heat a pan and add 4 spoons of oil into that. Once the oil is hot, add half a spoonful of mustard seeds, and when they pop up, add crushed garlic, ginger, cardamom, clove, curry leaves, and pandan leaves. Then stir them well and cook until the aroma comes out. Then add tomato slices stir well, and cook for about one minute. Next, add a big Bombay onion and green chili and stir well. Then cook for about 2 minutes until everything becomes soft. Next, add roasted curry powder, chili powder, and black pepper. Then stir everything well and keep it another minute on the stove under low heat. Now, add mushrooms to the pan and mix well, close the lid, and keep under low heat for about 3 minutes. Finally, add half a cup of water and salt to your taste. Then mix well again, cover the pot, and cook another 5 minutes under low heat.

Step 04
Now your mushroom curry is ready. Next, check the taste; if everything is fine, turn off the stove and serve it on the table.

This mushroom curry is perfect to use with plain rice, string hoppers, roti, and even bread. It has a very yummy and soft texture.
