You know that one of my favorite things in this world came about by accident, more than 7,000 years ago, someone somewhere in the Near East was transporting milk in a very particular object, the stomach of an animal. What that person didn't know is that the stomach contains rennet, a natural enzyme that causes milk to separate into solid parts and liquid parts.


After a long walk in the sun, when he opened the container, he found no milk, there was a whitish, yellowish, thick and quite cloudy liquid floating inside, it must not have smelled very good, so we don't know if he tried it out of bravery, hunger or accidentally, but the important thing is that he did it and I will be grateful to him all my life.


He had just created the first cheese in history, today there are more than 18 types of cheese around the world, many melt just by looking at them, some have holes, there is Parmigiano Reggiano, my favorite, Roquefort cured in natural caves in France, buffalo mozzarella that is made by hand and stretched like white silk.


They have their own section in the supermarket and there are even international championships to choose the best, but it all started by mistake millennia ago with someone saying, "This smells funny, I'm going to try it."
