Method of making jaggery from sugarcane
Friends! I hope everyone is well. I am well by the grace of God. My beloved organization has been on vacation for a few days. I had made a wish in my heart that I would post at least twice a day in these few days. But due to illness and various busyness, I have failed to post for the past four days. Today, leaving all the busyness behind, I am @jubayer95 from @Bangladesh.
The topic I will write about today is
"Method of making jaggery from sugarcane".
Respected friends! You must be aware that our beloved motherland Bangladesh is an agriculture-dependent country. And the main and one of the main jobs for the livelihood of most of the people of our country is agricultural work. Our farmer brothers cultivate various types of vegetables including paddy, jute, wheat, corn, sugarcane according to their needs. Farmers cultivate sugarcane with great joy. Today, I will not discuss the method of sugarcane cultivation. Rather, I am presenting to you the method of making jaggery from sugarcane in a brief form.
To make jaggery, first of all, sugarcane has to be collected from the ground. And it has to be cleaned properly, the leaves attached to the sugarcane and the stalks have to be cleaned. Then this sugarcane has to be carried to a specific place for threshing.

After cleaning the sugarcane as required and carrying it to a specific place, it has to be threshed with the help of a machine. The machine for threshing sugarcane is currently electric. However, in some places, threshing is also done with the help of a diesel-powered machine. With the help of the machine, the sugarcane has to be inserted inside the rotating mill, as a result, the pure juice will come out from the front part due to the pressure of the mill. And the sugarcane chalk will come out from the back part. Which I have tried to show you by taking pictures.

To burn the juice released from the sugarcane, a large pot has to be prepared. The pot is called a cauldron in our rural language. This cauldron has to be placed on a specific stove and the juice has to be poured there. Now the juice has to be fermented with the help of fuel for a long time. And the dry leaves attached to the sugarcane are usually used as fuel. And after the juice is extracted from the sugarcane, the chalk that remains has to be dried and sieved.

In this way, this juice has to be sieved for about three hours with the help of fuel. Initially, the dirt-like things that are present in this juice will be removed. Then slowly the color of the juice will become beautiful and beautiful. Then at some point this juice will become like glue. Then you have to close the sieve and take it down from the stove. If you wait for some time, it will slowly curdle and transform into a solid.
I remembered my childhood. When my father used to do this business. Then I used to come home when my company was closed and help my father in this work. Although the work is relatively difficult, good profits can be obtained from this.
