Mixed vegetable recipe

I hope you all will be doing well. Today I am going to share with you the recipe of mixed vegetable which I made yesterday for lunch. This recipe is very colourfull and boost hunger of everybody. let us go to the kitchen to make my favourite recipe.
Ingredients

- Potato 1 medium sized
- Tomato 1 medium sized
- Capsicum green 1 medium sized
- Capsicum red 1 medium sized
- Cabbage 1/4 piece of a medium sized
- Purple cabbage 1/4 piece of a medium sized
- Fresh red chili 3 pieces
- Carrot 2 small sized
- Onion 1 small sized
- Oil 2 table spoon
- Salt 1 tea spoon
- Black pepper 1/2 tea spoon
- Red pepper 1/2 tea spoon
- Cumin Seeds 1 tea spoon
- Vinegar 2 table spoon
Cooking Procedure

- First of all grate potato and carrot with a grater and chopped all the vegetables finely.
- Take a pan and steam the grated potatoes and grated carrots with some water.
- Put them a side and let them cool.
- Heat the oil in a pan and add chopped onion in it.
- Then add potato and carrot into it and saute for a minute.
- Now add all other vegetables along with black pepper, red pepper and salt in it.
- Saute it for a minute or two.
- Add vinegar and then put the lid on the pan.
- After five minutes mix it well and feel the aroma.
- Mixed vegetable is ready to serve.

Variation:
I enjoy this recipe with a number of variations. I add any spice of my choice instead black and red pepper such as:
- Jalfrezi spice.
- Sweet & sour spice.
- Maggi Masala
- Chicken Powder along with spices of your own choice.
- You can also add soya sauce.
- We can also add sliced ginger and garlic.
- Another thing we can do is to fill this mix vegitables into flat bread roll with a topping of chees or Mayonees or Sandwich Spread.
