For today, I want to share recipe of Edikang Ikong soup; A rich delicacy that originates from Akwa Ibom State, Nigeria made with fresh pumpkin leaves and water leaf.
- Vegetable leaf
- Water leaf
- Fresh fish
- Onions
- Fresh pepper
- Salt
- Maggi
- Palm oil
- Crayfish
- Periwinkle
- Dress the fish, wash and season with salt, maggi, fresh pepper and a little water, steam for 3 minutes then add periwinkle and stock fish to boil together.
Steaming proteins
- Remove the fish out then add water leaf and palm oil.

- After boiling for 5 minutes, put salt, maggi and blended fresh pepper.

- Add fresh fish then allow it to boil for 2 minutes then pour the vegetable leaf.

- Add crayfish and palm oil then boil for just 1 minute ( the vegetable leaf should not be overcooked).

My delicious delicacy is ready and it can be served with white rice, different types of swallow ( pounded, fufu, wheat, semovita and garri), boiled plantain and yam.
