Today, I had to prepare prasad for Vishwakarma Puja, which includes boondi. We were discussing how many boondi we should buy. My children said, "Mom, you make it at home; we'll make more." We want to eat it. I said, "Okay, I'll make it." At home, we make a good amount, enough to keep for 5 to 6 days. So, today we'll make sweet boondi.

The ingredients we need to make sweet boondi are as follows:

Bundi 1 kg
Sugar 1,250g
Desi ghee 100g
Red and yellow color
Water 2.5 liters
1 tablespoon milk

Method

First, we put water in a pan and bring it to a boil. Stir in the sugar with a spoon. It's still cooking on high heat because we need to make syrup, and we'll keep boiling it until it's one-string consistency. While it's boiling, we add a spoonful of milk to clear the syrup, meaning it removes any impurities from the sugar and creates a transparent syrup.

When we added the milk, it boiled and thickened to the top. I separated it with a spoon, resulting in a transparent syrup. Then, we mixed the red and yellow food coloring in a bowl and added it to the syrup. We added the desired amount of color to the syrup.

When the syrup thickened slightly, we scooped it up with a spoon. After it cooled slightly, we tested it with our finger, holding it between two fingers, to see if it formed a string. Upon lifting our finger, we saw a string forming. Then, we added the boondi.

Keep the gas on low heat, mixing the boondi thoroughly, so that the syrup is completely absorbed by the boondi. Then, we turned off the gas. Once all the boondi was mixed with the syrup, we covered it and let it sit for 10 to 15 minutes.

After 15 minutes, we saw that the boondi and sugar syrup had mixed well. When we touched the boondi, it had become soft. This meant that the sugar syrup had penetrated the boondi. I stirred it well again and then, to give it a shine, I added ghee to it and mixed it well. This also made it look beautiful. Our sweet boondi is ready.

Those who like dry fruits can add small pieces of cashew nuts to it. My children do not like cashew nuts in boondi, so I did not add them.

Those who like sweets, please try this recipe once and give me your feedback.
