"Recipe of the Day, Week No. 75: (cereal pudding - pap)"

Cereal pudding, otherwise known as 'pap' in Nigeria, is a fermented dried millet or maize sorghum. It is called 'akamu' in the eastern part of Nigeria, where I come from. It is a very nutritional meal that can be taken alone or is best taken along with bean cake ('akara') or bean pudding ('moin-moin'). It is one of the best meals for babies from six months. It can also be taken with some milk, chocolate, nuts or fruits depending on one's choice.

This meal is best served as breakfast. I served this this Sunday morning, and my family always enjoys it. In this recipe, I will be sharing the step-by-step process of making this meal, and I am inviting @lirvic, @okere-blessing, @chilaw and @peacemike to join me in making this breakfast.

Ingredients

600 grams of fermented dried maize sorghum
Sugar to taste
Milk (powdered or liquid) to taste
Or
Chocolate powder to taste
Hot water

Procedure

Step 1:
Put 8 cups of water into a boiler or kettle and bring it to a boil.

Step 2:
While waiting for the water to boil, bring a deep bowl and dissolve the 600 grams of fermented dried maize sorghum using some water at room temperature and a spatula or spoon. Dissolve the lumps until it is smooth. This will take about 3-4 cups of water.

Step 3:
When the water boils, gently pour some of the water at boiling point into the dissolved mixture. Continue to pour the boiled water until the mixture becomes like a paste or when the colour changes or deepens. Give it a quick stir to get it incorporated.

Step 4:
Dish the pudding into some bowls for the family and add in some milk or chocolate depending on one's choice. You can spice things up by adding some nuts or fruits.

This preparation took me about ten to fifteen minutes to prepare. This makes it very ideal for breakfast in the morning.
Very important thing to note is that when adding the room temperature water, be careful not to make it too watery; it should not be watery neither thick like a paste.
