"Recipe of the Day, Week No. 77: ( Veggie Delight: Potato, Peas, and Carrot Rice)"

How are you all, friends? I hope you are all well and enjoying your days very beautifully. By the grace of Allah I am completely fine. And I am also spending my days in a very good way and am also very happy. Today I am participating again in this contest organized by our beloved ma'am @nancy0. I thank you for organizing this amazing and delicious contest every week. I made my favorite rice today. I like this rice very much because I added a special thing to it. Which is peas. I like rice with peas very much. I have made them in a very simple way and I have added simple spices to it. I have not made it too spicy so that it can be eaten easily and it does not cause any health problems for anyone because it is almost rice and they are forbidden by almost everyone due to stomach problems. That is why I have made it with simple ingredients so that everyone can eat it easily. So let's start.

I separated the peas. Peeled the carrots and cut them into thin small. And peeled the potatoes and cut them into medium sized slices. I peeled and chopped three medium sized onions. I washed all the vegetables thoroughly with water.
I put the pan on the stove. Turned on the flame. And poured ghee into it. When the ghee was hot. I added the chopped onions to it. By the way, oil is used to cook food. Which is very beneficial for health. But the texture of rice that is made is much more delicious if rice is cooked only with ghee. And rice with oil never becomes very tasty. That's why I've always made rice with ghee. When the onions turned light brown. I added water to it.
- When I added the water to the onions. after a minute I added the hot spices to it. Most people add the hot spices later when we add the rice. But I always add the hot spices at the same time because it also adds a lot to the dough. After cooking it for three to four minutes. I added the tomatoes and fried them well. Now friends I added chopped green chillies and two tablespoons of salt and started frying them well.
- After frying them for five minutes. I added all my vegetables and mixed them well with the spices and fried them for another five minutes. When the vegetables were well fried, I added water to it. I had a bowl of rice. I added two bowls of water to it. Covered it and set it to cook.
- At that time, I washed the rice thoroughly and when the water started boiling. I started adding the rice to it. Guys after mixing the rice well with water and spices I let it cook.
- After some time, the water in the rice started drying up. When the water dried up well. I covered the lid with a cloth and kept the rice on low heat for 15 to 20 minutes.
