Chickpea salad is a tasty and nutritious salad that is made from the mixture of chickpeas, vegetables such as cucumber, red and green bell pepper, herbs like parsley and finally dressed with vinaigrette.

This salad is a lot of fibre, vitamins and protein making it a very healthy salad that should be regularly incorporated in our meal.

The main ingredients of the salad as I mentioned earlier are: chickpeas, cucumber, tomato, onion, red and green bell pepper, as well as parsley.

Functions of the main ingredients

  • Chickpeas: Chickpeas boast the protein level in the salad, and add creamy crunchy texture to the salad. I cooked my chickpeas, I did not use the can chickpeas.
  • Cucumber: Cucumber added that cool and crisp texture and hydrated the salad with it generous water content.

  • Tomato: In the salad tomato plays an important role of adding sweetness and that reddish colour to my salad.

  • Parsley: Parsley garnish the salad and also give that irresistible flavour and aroma.
  • Sweet corn: Sweet corn provided my salad a good amount of sweetness and some yellowish looks that made the salads look inviting.

Here is my chickpea Salad Recipe

Ingredients I used for this salad

The base ingredients were:
200grams of cooked chickpeas
1 onion
1 tomato
1 cucumber
1 red and green bell pepper
Parsley

Ingredient for the vinaigrette were:
3 teaspoon of olive oil
2 teaspoon of vinegar
1 teaspoon of honey
Red ground Pepper to taste
Table Salt to taste

Preparation in steps

Step 1

To begin the preparation by practising food hygiene and this was done by thoroughly washing all the ingredients with clean water.
After washing, I drained them and then started chopping it into smaller square shapes.
I was intentional about the chopping because I wanted all of them to have the same shape.

Step 2

In a clean bowl, I begin by adding each of the base ingredients. I started with the cucumber, after adding the cucumber, I go in with tomatoes, and after the tomatoes, I added red and green bell pepper as well as onion and then parsley.

Step3

In this step I added to sweet corn and the the chickpeas and finally mix all of them and then set it aside.

Preparation for the vinaigrette

I started the preparation of the vinaigrette by placing the oil in a clean container, I used olive oil for this vinaigrette, vinegar and honey. After putting these oil, I mixed vigorously.

I added pepper to the mixture and salt, I mixed it thoroughly and set aside.

Having finished with the preparation of the vinaigrette, I added it to the salad and mixed everything together.

I checked the flavour and the added make sure all the ingredients were in their correct proportion.

I refrigerated for some minutes before serving and it was so delicious 😋.

I have not tried chickpeas salad before. In fact it is my first time knowing that there is an salad called chickpeas. It was a nice experience and for the fact that the outcome was beyond my expectations made it and interesting experience. I knew if I followed the instructions carefully that I will get it but didn't know it will come out this nice and yummy 😋.

Benefits of Cucumber

Cucumber is an important ingredient in the chickpeas salad that keeps the salad hydrated.
It added a milks and sweet flavours that helps compliment other ingredients in the salad

Benefits of chickpeas

It is a good source of protein and is also high in vitamin and minerals like iron and potassium.
Chickpeas has some fibre content that can help lower cholesterol, support healthy blood sugar too.

Benefits of bell pepper

Bell pepper are just too amazing with its high vitamin A and C which the vitamin A in it support our Vision and Vitamin C in the pepper boast our immune system.
This pepper is a good source of fibre too.

Benefits of Onion

Onion is rich in antioxidants and it helps protect the body against cell damage.

It anti-inflammatory property help in reducing the risk of some chronic diseases like high blood pressure.
It adds flavour to the salad and make it more nutritious.

I do not have any special tips for making this salads, since it is my first time, I only followed the steps by steps guidelines by our dear challenger @dasudi and it came out this good.

She is such a good teacher making the whole process easy to follow.
