Usually in my country the first thing we do is fry the vegetables with oil, we also add a generous amount of salt and then we add the liquid and let it cook until all the tubers are well cooked and at the end we add cilantro leaves and it becomes very flavorful, do you do that when cooking? Your soup looks just like I like it, light or not thick as it usually gets when you heat it many times and it ends up drying out, I don't like that at all.

No I do not pre-fry the vegetables because chicken is already has natural fat and I do not want to mix any other fat into my soup so all vegetables are fresh, I actually cook then for short time too, sometimes they are stick taste fresh, especailly onion and garlic I try not to cook too long so that they do not loose they taste at all. Thank you for your feedbacka nd sharing your way of cooking.
