My Food Diary: Making Coconut Rice(06-09-2025)

Hello everyone, trust you're doing great? How's the weekend going in your end? For me, it's the best weekend I've ever had in a long time now. I've created so many memories since my travel back home and it's giving me butterflies in my belly. One of the significant things I did that brought me so much joy was to prepare coconut rice, now let me take y'all on the process step by step.

On Saturday morning, after I had done my chores at home, I asked my mom to give me coconut to eat that I was craving it. She called someone to help climb the cocount tree to pluck it and when the person did, my brother peeled and broke it and gave me the water to drink. I ate the coconut with bread and remained some to take back to my base in town. But in the evening, around 3:45pm, I started having strong cravings for coconut rice, it was irresistible that I had to call my siblings and plan on how to make the meal immediately. I knew mom won't like the idea because I won't finish the process before 6pm and she doesn't like making meals at night. I sent my siblings to go buy rice and other ingredients while grated the coconut using a manual grater.

While grating the coconut, I had put the pot of rice on fire to parboil it. The rice was a bit tender before I could finish with the grating so I suspended the grating for some minutes to wash the rice. I returned back to it when I was done washing the rice and rounded up the process. I added lukewarm water to it, used a spatula to stir it and sieved out the coconut milk into a big pot. I turned in the rice into the pot, added seasonings, crayfish, pepper, fish, salt and every other thing I deemed fit to be in the pot. I did more works on the fire that made it burn well and put the pot of rice on it.

I allowed it to cook for some minutes and I checked it to know the progress, the rice wasn't as tender as I wanted it to be and by this time, it was beginning to dry up. I added a little more of the coconut milk extract and covered it back to cook, it was now late and my siblings were already panicking, asking when the meal will be ready so they could have dinner and go to bed. The funniest was that, despite this panic, they refused to have soup and swallow for dinner and all waited for the rice to be ready so they could eat. The food was ready in some minutes and I put off the fire and brought down the pot.

I called my mom to come and dish the food but instead of dishing it separately for everyone which I would've done if I was the one to share the meal, she dished it into a tray for everyone to eat. I loved the idea though, it's been long we had a meal together as a family. We ate, I took my bath, wrote my dairy and guess what I did next? I went snail hunting!!!!

The mama, you really know how to cook. It's been long I visited my village and I am hoping daddy will permit me to because I miss eating local food like this.
