RE: Indian Inspired Green Coconut Curry: Just Because Wednesday

I've got my bowl and spoon ready--bring on the soups!! I do love curries, but I don't know that I've ever made a green one at home! Gotta change that soon for sure! And of course I would happily plop some of @jasmink's peanut butter in just about any recipe...

Ah yea soup season… ah yea soup season :) Definitely try this easy peasy curry out. It really is a pretty green color and mixed with the yellow corn- this stuff sells itself. Next time I’ll go for the heavily spiced involved curry, which I’ll need to do a spice run for… I imagine it’ll be a little more difficult than this one.

Yes- peanut butter for the win… thanks for stopping by @plantstoplanks :)

I'm starting to get low on some of my spices, too, so it's almost time for some Penzey's! I'm hooked on their spices and I love their message of cooking being a way to show love and bring us together.

I definitely like the corn in this one. The delicious white corn I got a few weeks ago is supposed to have one more haul coming in either this week or the next, so I'm hoping to grab a few more ears that would be perfect in this!

Yes- my fellow farmers market connoisseur! That corn would be perfect :) Did I ever tell you that corn post inspired me to make some succotash a day or two later? Super delish!

You have to share with me what Penzy spices are? It sounds like I also love their message. My husband and I are about to leave the country so I try not to acquire any more things i.e. spices, but some recipes it is very necessary ! I guess it could be worse… I could spend my money on habitual shopping sprees rather than F.M. and spices 🤷🏼‍♀️

I love their spices! I buy most of them in the larger sizes because I go through so much! I'm definitely ruined for grocery store spices now, haha!

Oh yeah- I’d have to cop the larger size too… I go through way too much spice to mess around with the travel size :). Maybe when we settle down this will be my new spice acquisition website. Haha, thanks @plantstoplanks
