Indian Inspired Green Coconut Curry: Just Because Wednesday

Hey ya’ll! Guess what is just about around the corner…? Anyone got it…? That’s right… it’s just about soup season and I’m super excited.

I believe soups, chili’s and stews are so healing, soothing to ones soul. That’s why when I pop over to a friends house, I usually come with a Tupperware full of this soup soothing treat. In fact when unexpected visitors show up to our house, one of the first things I do is start a big ol pot of something soupish.

One of the first dishes I prepared as a newly plant based eating diva was a chili 😋 and oh boy did that turn out perfectly. Good thing, too, because my next two dishes I believe I had to toss- they were inedible. Although, my perfect husband would have happily devoured them, I spared him the show and dance of pretending that “dinner was good”.

Now I know to never skip the ‘soak your cashews’ part of the directions for a homemade, dairy free Alfredo sauce. Lesson learned !

Today, for ::Just Because:: Wednesday I’m going to share a few ingredient Green Coconut Curry.

Green Coconut Curry

My husband and I just recently discovered coconut based soups and curries (Yeah, I’m not sure where we’ve been 🤷🏼‍♀️). One of his favorite dishes is a yellow curry from our local Thai spot- I like the Pad Thai myself. Upon first trying his curry I became instantly inspired. I now realize that coconut curry isn’t only confined to Thai food but is commonly used in Indian food as well. This 5-7 ingredient Green Coconut Curry is Indian inspired.

Ingredients

1 Can Full-fat Coconut Milk
1 Bunch Cilantro (washed-destemmed)
1 Bag Frozen Corn (thawed, drained)
1-2 Jalapeños
1-2 Tbsp Peanut Butter (this is a make your own recipe from @jasmink- 😋)
2-3 Tbsp Roasted Peanuts (crushed but not heartbroken)
Sea Salt (to taste)
Black Pepper (to taste)

Directions

Using a blender (or food processor) combine coconut milk, cilantro and jalapeno(s) and blend until you get a nice smooth green color.

I sliced my jalapeños and de-seeded them but this made my Curry turn out pretty mild, I’d leave a few seeds if you like more kick.

The nice part is you don’t even have to chop the cilantro- just throw the whole leaf in there as is…

I started with the coconut milk first to help my blender along in the blending process. She’s been a good cooking/baking helper these past few months :)

Here’s the before with errthing… then the after:

Look how pretty the soup is already. (Side note: I was wondering when one of my pictures was going to copy and paste in here sideways… well wonder no longer, this blender initially pasted sideways. What’s up with that 🤷🏼‍♀️).

Pour the blender yum into a pot and bring to a boil. I also add some Sea Salt and Black Pepper here. Once it’s to a boil, bring soup down to a simmer

The idea is to thicken it a bit.

Now add your thawed and drained corn (you can use fresh corn as well but I’m not sure how many you’d need. My guess would be about 3-4)

This has to be easily one of the prettiest soups I’ve ever made.

Stir everything gently and well while bringing the curry to another boil- reduce heat to a simmer and I covered the pan with a lid. Leave simmering stirring occasionally for about 30 minutes (goal is to thicken the curry).

During this down time, I get started on my brown rice. This time my rice is seasoned with salt, pepper, basil, oregano, cayenne and cilantro.

Then my favorite part- crushing the ‘not heartbroken’ peanuts.

In order to not make a mess I employ my super sturdy and versatile sandwich bags (which I never put sandwiches in) to keep the nuts contained.

Taaadaaa! Like magic…

Now that the curry has thickened add salt, pepper and put the flame on low. Scoop out a spoonful or two of your favorite (or homemade) peanut butter and stir until fully mixed in the curry.

For a couple minutes continue mixing the curry and add the crushed (not heartbroken) peanuts.

Serve warm with a side of herbed brown rice! Bon appetit 😋

This Green Coconut Curry is so easy and so delicious it would be a crime for you not to try it yourself. Let me know what you think and I’m fully aware this recipe doesn’t call for ‘curry powder’ or other traditional Indian spices but it’s no less of a curry so let’s not hurt it’s feelings, okay…

It’s a little sweet, somewhat spicy, tastes like a treat but nourishes like a superfood… it’s Green Coconut Curry

Oh that looks so good, and surprisingly not that many ingredients which is always a bonus. I would happily have this for breakfast lunch and dinner. Do you soak your rice before cooking? Apparently that’s a tip for soft fluffy rice, have never tried it but will next time rice is on the menu.

I use brown rice and always rinse and soak before cooking. If I don’t do this step then it will taste very earthy. I also like to season and add chopped tomatoes, onions, spices and whatever else I think of while cooking rice. Definitely give it a go- you won’t regret it.

Yummmmm-oh yes please! I’m totally doing this with my next batch of rice, especially brown it can come off a bit too bland sometimes.

Yea, I constantly add different things to my rice while it’s cooking. The result is kind of like a pilaf or jambalaya kind of.

I remember when you threw down in the kitchen too… I came home from school and you had all of this awaiting me and then the day you stuffed those peppers with farro and deliciousness for me to come home to… man, I miss those food fight friday preparations. Woah! This looks delicious @puravidaville. I'm drooling and I've just eaten breakfast. I love you "exotic" flavours. My husband is peanut butter mad but not a green lover (apart from big garden salads) I wonder......

When I make a green smoothie, despite some fruit in it, my husband turns a shade of green just looking at it! I would suggest you try some South African dishes but we are famous for deep fried pastry and big hunks of meat with a local favourite called pap (a type of polenta I guess)

My green smoothies never turn out to be that pretty green- so I can see how it wouldn’t be appetizing to some. That Pap sounds interesting… I don’t know if I’ve ever had a South African dish… this is inspiring me to find and make one :)

Oh mine are a lovely lime to apple green. I always add some fruit. And always avo! Today we had pineapple and pear. Then I raid the leafy greens from our garden (beet, kale, brocolli, cabbage, spinach and an assortment of herbs) and a fresh carrot or two. Plus baobab powder. Yum

But to your recipe, that green color, it's just stunning! In my opinion, the greener, the better! It’s fun trying to make different dishes from different places. This was actually my first curry ever- we think it turned out well. Next time I’ll try the more traditional route with all of the spices and stuff. This Green Coconut Curry, though, really photographed itself. Would have been a shame not to post it.

Discovering new dishes around the world is something I also love! There are so many intriguing flavor combinations to try and savour. I've got my bowl and spoon ready--bring on the soups!! I do love curries, but I don't know that I've ever made a green one at home! Gotta change that soon for sure! And of course I would happily plop some of @jasmink's peanut butter in just about any recipe...

Ah yea soup season… ah yea soup season :) Definitely try this easy peasy curry out. It really is a pretty green color and mixed with the yellow corn- this stuff sells itself. Next time I’ll go for the heavily spiced involved curry, which I’ll need to do a spice run for… I imagine it’ll be a little more difficult than this one.

I'm starting to get low on some of my spices, too, so it's almost time for some Penzey's! I'm hooked on their spices and I love their message of cooking being a way to show love and bring us together.

I definitely like the corn in this one. The delicious white corn I got a few weeks ago is supposed to have one more haul coming in either this week or the next, so I'm hoping to grab a few more ears that would be perfect in this!

Yes- my fellow farmers market connoisseur! That corn would be perfect :) Did I ever tell you that corn post inspired me to make some succotash a day or two later? Super delish!

You have to share with me what Penzy spices are? It sounds like I also love their message. My husband and I are about to leave the country so I try not to acquire any more things i.e. spices, but some recipes it is very necessary ! I guess it could be worse… I could spend my money on habitual shopping sprees rather than F.M. and spices 🤷🏼‍♀️

Nice, thanks @avizor! It really was a simple curry but quite delicious too. I usually try and show ‘every step’ even if there are mess ups or tricks 🤷🏼‍♀️ I’m glad you like it. Definitely good for a cooler day but if you’re like me then you will make soups in 90 degree weather. What can I say, we live in LA- if I didn’t then I would never have soup. Haha

Yes! Curries are some of the most healing and robust meals I’ve had, I also have never successfully made a good one because the recipes always look so long and complicated, not this one though!
