This is my entry to the contest "Photo of the Week Contest 15 | Sharing my best Photo of the Week" in the "Ladies Universe" community organized by ma'am @m-fdo

I’ll be the first to admit it I’m what you’d call a ‘sometimes cook’ I don’t spend every day in the kitchen but when I do I love to challenge myself For me cooking is not a daily chore it's a special event I always try to create something I’ve never made before turning each meal into a new experiment and a beautiful memory

The inspiration for this particular dish came from a very special request My cousin was visiting our home and she specifically asked me to make something unique After a little thought I decided to take on the challenge of making a White Handi The name itself sounded so elegant and intriguing!

The process was an adventure Unlike the rich tomato based gravies we often enjoy a White Handi gets its beautiful creamy colour from a base of cashews cream and yoghurt I gently simmered tender pieces of chicken with whole spices like cardamom cloves and peppercorns The aroma that filled my kitchen was absolutely incredible warm nutty and inviting

The real magic happened when I added the creamy paste and let it all cook on a low flame I was careful to not add any strong-coloured spices allowing the beautiful white colour to shine through The final result was a luxurious aromatic and silky smooth gravy that was both mild and packed with flavour

The moment of truth was serving it to my family Seeing their faces light up after the first bite was my biggest reward! They loved it The chIcken was perfectly tender and the gravy was so delicious that everyone asked for extra naan to scoop up every last bIt It was a triumph and my cousin said It was one of the best dishes she had ever had

This White Handi was more than just a meal it was a celebration of famIly a successful experiment and a reminder that sometimes the sImplest colours can create the most vibrant memories I am so proud of this dish and I hope you like it too!
