I've never heard of harvesting these swarms, but that seems like a way to make lemonade from lemons. I read that people have eaten locusts, and it seems they could likely be used for animal feed, and certainly for fertilizer.

They're not gonna replace the food crops they're eating though, no matter how many can be harvested. Neither will they be useful if doused in poisons. These folks are gonna need food, and I hope they get it, as well as nominal means of reducing the impact of the swarms on their crops.
