I have this beautiful French cookbook and can't eat any of it without a 72-hour gluten hangover. People ask me how I can resist foods I'm allergic to. The aftermath is just too daunting. The migraine and nearly comatose reactions. It is my punishment. Food was my #1 go-to, comfort, bribe for living.
I have found other "bribes for living," as Jack London put it. (Was he talking about sailing or Jack Barley? Off to google it now.)

Of course there are a lot of French recipes without these ingredients, BUT many recipes include milk, eggs, cream, butter and wheat flour (so gluten ...)
I'm sorry to hear that you are allergic to all these elements ...
I've been a baker (I'm always a bit) and I must say that gluten - and yeast of course - are my best friends ... sorry lol !!

I'm using flax seed meal as a subsitute for milk, eggs, or butter, and I've tried all kinds of gluten-free flour blends, but nothing beats the real thing.
