That may be my favorite part of this recipe! Thanks so much for this - I've seen recipes saying to save your onion skins and other vegetable waste and boil it down for soup stock. Just. Not. That. Ambitious. Yet.
Didn't know this (and thanks again for the tips): - Don't let your broth boil. Boiling breaks the collagen if it boils too long, and it makes a mess on your stove
- Don't stir the broth or disturb it in any way unless you like mud colored broth
You should publish a cookbook with grumpy recollections and snarky advice - I'm sure it'd sell! It's the person anecdotes I love with a recipe.
