Oven Baked COD with AVOCADO SALSA | Delicious & Super Easy FISH DINNER!
Baked cod with salsa – a traditional Mexican sauce out of juicy tomatoes, red onion and tender avocado seasoned with lemon juice, tarragon and olive oil – needs only 20 minutes of cooking time and then such a tasty dinner on the table.
Ingredients:
• cod fillet – 2 lb / 800 g
• tomatoes – 10,5 oz / 300 g
• 1 avocado
• red onion – 2 oz / 60 g
• olive oil – 5 tbsp
• dried tarragon – 1 tbsp
• lemon juice – 1 tbsp
• salt – to taste
• ground black pepper – to taste
You will need:
• oven
• baking tray or dish
• carving board
• bowl
Preparation:
- Preheat oven to 400°F / 200°C.
- Brush a baking dish with olive oil and lay out the pieces of fish fillet 1-1,5 in / 3-4 cm thick in it. Sprinkle with salt and black pepper to taste and top with 2 tbsp of olive oil.
- Bake in the oven at 400°F / 200°C for 6 minutes.
- Dice the tomatoes, avocado and red onion.
- Add the tomatoes, onion, avocado, dried tarragon, lemon juice, 2 tbsp of olive oil, salt and pepper to taste into a deep bowl and stir.
- Take the fish out of the oven, top with the prepared salsa sauce, spreading the vegetables evenly onto the fillet, and bake the fish with avocado salsa in the oven at 400°F / 200°C for 3 minutes more.
