Today I Cooked: Mouthwatering Chicken Biryani

Cooking is always a journey of flavors, and today I decided to make a classic favorite – Chicken Biryani. The rich aroma of spices, tender chicken, and perfectly cooked rice make this dish a true comfort food.

Ingredients:

1) 500g chicken, cut into pieces

2) 2 cups basmati rice

3) 2 onions, sliced

3) 2 tomatoes, chopped

4) 1/2 cup yogurt

5) 1 tsp ginger-garlic paste

6) 1 tsp turmeric powder

7) 1 tsp red chili powder

8) 2 tsp garam masala

9) 3-4 cloves

10) 2-3 cardamom pods

11) 1 cinnamon stick

12) Salt to taste

13) Fresh coriander and mint leaves

14) 3 tbsp cooking oil or ghee

Instructions:

1. Wash and soak basmati rice for 30 minutes.

2. Heat oil in a pan and fry sliced onions until golden brown. Remove half for garnish.

3. Add ginger-garlic paste and sauté until fragrant. Add chicken pieces, turmeric, red chili, and salt. Cook until chicken is lightly browned.

4. Mix in chopped tomatoes and yogurt. Cover and cook for 15-20 minutes until chicken is tender.

5. In a separate pot, boil rice with a pinch of salt until 70% cooked.

6. Layer the rice over the chicken, sprinkle garam masala, coriander, and mint leaves. Cover tightly and cook on low heat for 15 minutes for the flavors to blend.

7. Serve hot with fried onions on top and enjoy the aromatic delight!
