Recipe! Earl grey cookies

Back for another little recipe

This time, I tried to make these Earl Grey cookies (in the UK, we call them biscuits, not cookies!). The original recipe was for London Fog Cookies, but I didn't have any ingredients for the frosting, so I just did the biscuits by themselves.

I love cakes that infuse tea flavours, and this recipe is a perfect example!! The flavour of the tea came through great! I feel like adding in white chocolate chips would be even better.
In case you haven't tried Earl Grey tea before, it's a black tea blend that has the oil of bergamot. It tastes rich and deep, with some caffeine in it.


Ingredients


So important to say again, I am only making the biscuits from the recipe, so these are just Earl grey flavoured biscuits!

  • 3 Tablespoons of Earl Grey tea
  • 344 grams of plain flour
  • 1/2 teaspoon of baking powder
  • 1/2 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 200 grams of granulated white sugar
  • 227 grams of unsalted softened butter
  • 1 egg
  • 2 teaspoons of vanilla essence

The steps

I never start with preheating the oven, as I usually take a long time to actually be ready. But for those of you that do, preheat the oven to 175 degrees Celsius, and make sure to prepare two baking trays!

So for my earl grey, I actually used teabags that I opened and poured the contents into the bowl, getting rid of the bags. This ended up using 4 bags of earl grey tea for the 3 tablespoons, but this might depend on the brand of tea you use.

In the bowl with the earl grey tea powder, I sifted in the flour, baking powder, baking soda, and salt, and used a fork to fully mix it together.

Then, in a separate bowl, I creamed together the butter and the sugar with an electric whisk, until it was light and fluffy.

When that was done, I added in the egg and the vanilla essence. I accidentally spilt some of the vanilla in, but it didn't seem to be too much fortunately! I used the electric whisk for this step.

Then, I mixed in the dry ingredients. I did this with the whisk for a bit, until it got too thick and I switched to a metal spoon.

When this was done, I scooped out the dough with my hands and roughly made balls, putting them on the trays. I flattened the ball down for a bit as it had the rising agents (baking powder, soda) so I didn't want them to come out too risen haha.

The recipe suggests each ball to be 2 tablespoons of mixture, but I didn't measure each out, so some were a bit larger than the others. The original recipe yields 20 total cookies, but I ended up with 12 because of the size difference.

I baked the cookies for about 10 or 12 minutes because of their uneven sizes. Make sure to let them cool before you eat them!


Review


These were so delicious, didn't really need the cream cheese frosting that the original recipe suggests. It was actually really quick and easy too, and I had all the ingredients so a great staple. Will definitely try make them again!
