My first Spinach Pie - with tzatziki! - Grandma's recipe!
I'm proud to post this picture of my first spinach pie I made yesterday! Really easy to make and extremely tasty!
And of course, as a proper Greek, I accompanied it with homemade tzatziki!
I am not much into cooking, but I do love food photography so I have to have material haha!
Plus, I have hungry boyfriend to feed so...no excuses haha! And as he says 'easy peasy'!
Here's my grandma's recipe (that it worked! Yummy!)
For the tzatziki:
Greek yogurt (preferably 10%, but 2% can work as well) The amount depends on how much you want to make, but usually I make around 400 grams.
1/3 of chopped cucumber
2 soup spoons of olive oil
A bit of salt and pepper
1-2 teaspoons of garlic in power - depending on how strong you want it, you can add less or more. You can also use fresh chopped garlic instead, works as well or even better!
2 drops of lemon juice
You mix them all up well in a bowl, and you have your tzatziki!
Now, the pie ;)
You need:
A large baking pan
Baking paper and a little flour for the pan and the dough
Dough as much as the size of your pan - I usually use frozen one, but if you can make it from scratch I admire you!
300-350 grams of frozen (or fresh) spinach
1 chopped onion
200 grams of trimmed (with a fork) feta cheese
Around 100 grams of (ready) grated mozzarella
1 shaken egg
2 soup spoons of butter
A bit of salt, pepper, oregano, thyme, lemon juice and olive oil (2 teaspoons of those last two)
Simple steps:
-Preheat the oven at 200 degrees (no air)
-Cook the spinach and onion in a pan with 1 spoon of butter, salt and pepper, in low fire (4 or 5 out of 9 stove temperature)
-In the meantime you mix in a big bowl: trimmed feta, grated mozzarella, shaken egg, salt, pepper, oregano, olive oil and lemon juice. You add the spinach and the onion when they are done.
-You put the baking paper in the baking pan, then flour in the pan and on the dough. Note that the frozen dough needs to stay at least 20-30' in room temperature to be able to work with it! You put the mix in the dough and close it. You melt some butter in a small pan to put on top of the dough, together with a bit of thyme (that's just for extra flavor and nice look - it's up to you if you want to use something else or nothing at all)
-You bake the pie for approximately 15-20' (ovens might differ so check what the dough box says - if homemade dough, 20'-25' is more than enough) in 200 degrees.
Aaaand ta-daaa! Your pie is done!
