Guilt Free Cashew Chicken Stir-Fry!
This is one of my favourite dishes. So delish!
2 cloves garlic, thinly slices
1 lb boneless chicken breast halves, cut into 1 1/2" chunks
1 large red pepper, cut into 1 1/2 " pieces
2 scallions cut into 1" long pieces
3 tbsp stir-fry sauce
1/4 cup salted roasted cashews
Method:
Coat large non-stick skillet with cooking spray and heat over a medium-low heat.
Add garlic, cook, stirring constantly, until lightly browned (about 2 mins)
Increase heat to medium high. Add chicken, cook stirring until chicken is brown
and no longer pink in the centers (about 3-4 mins).
Stir in pepper, scallions, 1/4 cup water and stir-fry sauce. Cook, stirring occasionally until peppers and scallions are softened and sauce thickens slightly (about 5 mins.)
Transfer to a platter and sprinkle with cashews. If desired serve with rice.
