Recipe of the Day, Week No. 81. Golden Crunch Pakoras

Hi, I am Arsalan Khatri from Pakistan. I hope you all are doing well and in good health. For the past two days, I haven’t been able to share any posts because I was out of the city. But today, I’m back with another delicious recipe for you all. The name of today’s recipe is “Pakoda”.

Method
Step 1 — Make the batter:
In a large bowl add the gram flour (besan). Stir in salt, cumin seeds, red chili powder, whole coriander, and a pinch of baking soda. Gradually add about ½ cup of water (add a little at a time) and whisk to make a thick, smooth batter — similar to the consistency of a spoonable paste.
Step 2 — Add the vegetables:
Fold in the finely chopped spinach, grated potato, thinly sliced onion, and chopped green chilies. Mix everything thoroughly so the vegetables are evenly coated with the batter.
Step 3 — Fry the pakoras:
Heat enough cooking oil in a deep pan over medium–high heat. When the oil is hot, drop spoonfuls of the batter (about 1 tablespoon each) into the oil and gently shape if needed. Fry the pakoras in batches so they don’t crowd the pan.
Step 4 — Cook and drain:
Fry each batch until the pakoras turn golden brown and crispy (about 3–5 minutes), turning once so they cook evenly. Remove with a slotted spoon and drain on paper towels to remove excess oil.
Step 5 — Serve:
Serve hot with chutney, ketchup, or a cup of tea. Enjoy!
