Caramel Pudding
In today's culinary challenge, I will make a special dessert, the legendary Caramel Pudding. A sweet, rich, creamy and smooth jelly. Designed to escort the main dish and reset your appetite. I will be making this popular dessert recipe, and the procedure will be easy to follow. The aim here is to make a caramel Pudding.

Preparing the Caramel:
An excellent formula for obtaining a good caramel is a sugar-water ratio 2:1. Dissolving two parts sugar in one part water works for this consistency. Stir the mixture till all the sugar dissolves, then cook with low heat and watch as the colour changes from transparent to yellow, amber and stop when it is oak brown.
Empty the caramel into the mould and set it aside to cool off and thicken.
Egg-milk mix:
Crack two eggs into a clean bowl and start whisking gently. Pour in the milk and continue whisking till it becomes smooth. You may add a dessert spoonful of sugar depending on your preference.
At this point, the caramel in the mould is cold and has started caramelising thickly at the base of the mould.
Now pour the egg milk mix into the pan. The thick, cold, semi-solid caramel will retain its place at the base of the pan.
Prep the steamer.
Place a cover on the mould, and put it in the steamer, cooking with low heat for 45 minutes.
You can run a toothpick test to confirm if it is ready.
Serving
Flip it into a beautiful plate and allow the melted caramel to drip down onto the plate, flowing freely around the yummy caramel Pudding.

The result is a very yummy pudding with a little giggly giggle, an inviting flavour and taste that truly matches its looks.
The taste was so good I almost ate it all. It had the sweetness from the sugar, a creamy texture from the milk and that smooth, firm but yielding texture in the mouth.
I shared it with my kids, and the question was, "Why did you make so little?"
